Ingredients:
200g butter
¾ cup dark brown sugar
3 cups flour
1 large egg
½ cup molasses
2-4 tsp vanilla
Ginger, nutmeg, and cinnamon to taste
Method:
- Add 200g butter at room temperature and ¾ cup dark brown sugar to a large bowl. Beat the mixture until the butter turns light and fluffy. A stand mixer is great for this, but a handheld works perfectly well.
- In the same bowl, combine 3 cups flour, 1 large egg, ½ cup molasses, and 2-4 tsp vanilla with the butter mixture. Add ginger and cinnamon to taste. Knead the mixture until just combined. If preferred, you can substitute nutmeg for ginger.
- Bake at 150°C for 15 minutes and leave to cool on a flat surface. Your gingerbread will now hold strong even though your construction is out of this world.
